Spaghetti Bolognese is something I have made and eaten many times. This vegetarian version is adjustable, nourishing and simple. People are, of course, purists when it comes to certain dishes (my mom, for instance, when I made this for her, asked why it didn’t have any milk or cream in it like a typical Bolognese will have), but the history of this dish is not pure, either, with lots of variations evolving through time.
