Farm Kitchen Chronicles: Taco Soup
Soup to warm the soul (also, something easy to make for a rushed back-to-school weekday dinner)
This recipe is one that the boys call my “award-winning” soup. “Oh!” River said when I told him what I was making to put into the newsletter, “you mean that contest where your soup won?”.
It is in jest, because there was not an actual contest. I cooked this soup for a Soup and Bread event (a volunteer event where people cook soups and people can eat for free, or donate their “admission” of 5 dollars to a hunger-relieving organization). At the time of making this soup, I was reading a memoir about a woman and her goats. It was a food memoir, and in one chapter, she had a recipe for something she made often called “taco soup”. It sounded so good in the book that I decided to create my own version of it, and I tested it first at this Soup and Bread event.
