Since beets, parsley and kale are really booming in the garden, I am making this quick and easy meal and mentally going back on the road.

When we were travelling and in new cities, occasionally we would eat out, and one of my preferred cuisines when we treated ourselves to this was finding the local Ethiopian food. I just love the spices and flavors of this cuisine—and they do such great vegetarian dishes. (For those interested, my favorite Ethiopian restaurant that we ate at was almost three years ago in Berkley, California, at an Ethiopian-run restaurant that bought all of their produce from local, organic farms. It looks like it is temporarily closed now though!).

These two dishes together are a full meal that provide lots of nutrition, and all great vegetables to get from your garden or locally right now.
