Last week, I really laid it on thick on how important it is and how to keep your immunity up during this time of year. One of the things I mentioned was this was not the time of year for dry, crackly foods—think tortilla chips. So if you want something warm and comforting and fast, like nachos, what are you to do? Potato nachos, of course! Just follow the simple guidelines to make this a truly healthy dish while also getting the comfort food-benefits of something you could get in a homey diner.
