It is mid-February and it is snowing again in southwest Wisconsin, where this winter has been perpetually winter white. I tried snowshoeing for the first time with some borrowed snowshoes, and I have fallen on an ice three times now. I really do love winter, as I love being cozy, I love sweaters and hot chocolate and snow and being outside in the cold, but we are getting towards the time where I really start to crave warmer weather. Spring is more fun with a greenhouse to start in, so we will see what happens with that, but right now, when there is a lack of green growing outside, a bowl of French onion soup with a side of sauteed kale (our frozen stash) with a punchy lemon dressing is the perfect snowed-in dinner.
