Farm Kitchen Chronicles: Cozy Mexican-Inspired Lasagna with Mushrooms and Spinach

A couple of weeks ago I talked about the Tex-Mex favorite, Frito Pie, that I used to have as a kid. This week I am healthifying another dish that you don’t really hear about outside of Texas: King Ranch Chicken.
King Ranch is a famous, large ranch in south Texas, and the dish is named after it, though its origins are essentially lost to history; no one knows who invented it. The original recipe (and one that my mom still makes) rings of the processed food-lovin’ 1950s, using a can of Campbell’s cream of mushroom soup in between its layers (blech). This healthy version uses real mushrooms instead.
